🌿 Terroir and expertise:
Founded in 1929, the Anne de Joyeuse winery brings together winegrowers committed to promoting the terroirs of the Haute Vallée de l'Aude. The plots used for Very Chardonnay rest on clay-limestone soils where climatic conditions favor a gradual ripening of the grapes. This slow development helps preserve the freshness and aromatic finesse of the Chardonnay.
After pressing, the must is transferred to 220-liter barrels for fermentation. Daily lees stirring during the first two months helps re-suspend the lees and develop the wine's aromatic richness. Aging continues for four months in barrel. This process adds body and complexity while allowing the freshness of the terroir to shine through.
