After destemming and maceration to extract aromas and tannins, fermentation is carried out at controlled temperatures to preserve the wine's freshness. Part of the wine is aged in oak barrels to enrich its structure and complexity, while the remainder is aged in stainless steel vats to preserve its freshness and fruitiness.
